Easy lunches for the working girl
Whether you go into the office every day and have to think about lunch when you’re rushing out the door in the morning or you’re a WFH girly who ~somehow~ makes time for a midday shower but just can’t find the time to eat anything other than a bar between the hours of 9 and 5, this post is for you!
Lunch is so often skipped or replaced with snacking throughout the day, yet it’s so essential for our hormone health and overall wellbeing, so we’re here to make it easy.
Our go-to lunches for busy workdays
Fancy toast
Grab two slices of gut-friendly sourdough, stick it in the toaster (if accessible), and add your favorites — cottage cheese, lox, avocado, arugula, butter, hard-boiled egg, etc. Pack it with protein!
Salad but make it fun
Yes, salads are easy but they can also be boring and unsatisfying (aka not something to look forward to in the middle of a stressful day), so make your salad FUN! Add your favorite (and filling) toppings — feta cheese, leftover chicken from last night’s dinner, a fried egg, seasonal veggies from a local market, a homemade dressing you keep on hand, leftover bacon bits from breakfast, spices — you name it.
The hodgepodge
Probably one of the easier lunches to pack for the office. Simply open your fridge and grab a few things that don’t require any prep — as a rule of thumb, always opt for the fridge instead of the pantry when you can. If it’s helpful, use Kelly Leveque’s four categories as a guide to a blood sugar-balancing meal (fat, protein, fiber, and greens).
Here are some of our favorite staples:
Cottage cheese
Full-fat yogurt
Raw cheese
Raw veggies
Avocado with sea salt
Leftover protein from last night’s dinner
Sourdough bread
Nuts
Protein smoothie
If you’re turning to a smoothie for a meal, it should consist of a lot more than fruit and coconut water… Be sure to add a protein powder (here’s our favorite - Kelly Leveque coming in clutch once again!), greens, fats (think avocado or coconut cream), and probiotics (think yogurt).
Breakfast for lunch
While it might seem like a lot of work to take a frying pan out of your kitchen cabinet in the middle of the workday, we promise lunch will be ready in no time.
Two eggs, breakfast meat, buttered toast, and some sauerkraut will have you powering through the 2nd half of your workday like it’s nothing!
Tuna sally
This one might not be for everyone (especially our pregnant galpals out there) but it’s still a favorite in our book!
Open up a can of tuna, add some mayo, green onions, celery, whatever else adds a good crunch and mix it all up. Eat it alone or pair it with your favorite crackers.
